From the settlements in northern Alberta and around Sudbury to Quebec and have never seen horse meat being served by French Canadians. Do they eat it? Probably. Is it enough to call it a “staple”? Hell no! In fact the only time I could confirm a Canadian was eating horse was a friend of mine buying horse from a Dutch Canadian butcher for her Dutch Canadian parents. Same. I know it can be eaten and that there’s sometimes some of it in the frozen meats section, but would never call it a delicacy or even traditionally French canadian in any way.

Quebec: It’s there but not a really popular meat, it’s more specialty. There will usually be either a steak or ground in a sealed package. Not remotely as much selection as pork, chicken, beef, lamb, duck or turkey. Rabbit is also more popular/easy to find. There are way more plant-based protein choices in a typical supermarket than horse choices. I did eat it once. It was beefy and very metallic. Not much fat, so not as delicious as beef. I don’t have an issue with people eating it. It’s more sustainable than beef which is hugely unsustainable. I don’t know why you’d be okay with slaughtering cows by the millions, but host one event with horses and you lose your mind.
