If Louisiana is producing and consuming the Fishing iscalling and i must go fishers T-Shirt and I love this vast majority of crawfish in the world, and they call them crawfish/dads, then they’re called crawfish/dads. We’ve boiled three batches so far this season and are finally going to someone else boil this Friday. Thowing some crabs in the pot too because, why not. My absolutely favorite memory is of my SO boiling crawfish in negative 18 degree weather after flying them to the midwest for my b-day. Was sad to be in the midwest still but happy to eat some crawfish. Vietnamese style crawfish are DELICIOUS (apparently more of a Texas thing but I’ve seen it here a lot too). I’ve also experimented with tossing them in a garlic, cilantro, chipotle puree and butter sauce and almost died of happiness. It’s like how some of the coonasses sprinkle seasoning on top but wet like the Vietnamese style with a SA flair. Especially good if you have old mofos showing up who don’t like it when you “make it too spicey” (as if that’s an actual thing). Your fingers get coated in the goodness as you peel and they are finger licking delicious. Louisiana boil boosters are awesome. No Salt and adds a ton of flavor. I use to always avoid the first round during a boil because they were always bland (for the old folks) to me. Salt free blends tossed in with the regular boil changed our life.

Take your red potato mesh bag and put brussell sprouts in it (so you don’t lose them) and toss then in the Fishing iscalling and i must go fishers T-Shirt and I love this boil. Also I like leaving the potatoes in the bag during the boil. Turkey necks (smoked or regular) thrown in the boil after spending 20 minutes in a pressure cooker is the absolute best. For the kiddos take a mesh bag (not like the potato bag, like a bag made out of cheese cloth) put some some ramen noodles in it, tie it shut and throw it in after the boil (has to be at the end AND in a bag or it will be too salty). Put some crawfish tails on top and they’ll love it. I’ve heard some craziness about putting redfish fillets in a mesh sack, tieing it off, and boiling it for “cajun immitation crab” but I’ve never actually seen it with my own eyes.
