I think also authenticity only goes back so many generations in many cuisines. I was mislead too. Huge disappointment. They are good on their own (Neapolitan- sourdough style) but not NY style good. Their max n cheese is great though Might also be the flour, as an Italian who lived in New York for some time, I noticed the most striking difference between Italian and New York pizza for me was the the dough’s taste, I could tell they used different flours from those used in Italy which made it very distinctive. Would love to try that taste again without the 6 hours flight…! hahaha There are quite large differences in flour, flour in the US often has very different protein content. This is normal for many countries as flours super variable. Voodoo Rays also used to have a better recipe. I think they started cheaping out on ingredients. 2014 Voodoo rays in Dalston was way better than 2019 Voodoo rays that popped up in Shoreditch. That’s not the reason. It’s just that almost everyone makes Neapolitan style. I think people think the word Neapolitan is synonymous with ‘authentic’ and is therefore good. I blame Franco Manca for starting this.

I too am searching and haven’t found anything as close since Paradise Slice on Brick Lane closed. Closest would probably be Voodoo Rays like you said, Yard Sale or Gordo’s (all funnily enough within walking distance of one another in East London) or Slice Club, Hackney Wick. I’ve seen Homeslice suggested in similar threads, so I’m guessing it’s a good “New York style” recommendation, but £30 for pizza is tough to bear.
