I’m a firm believer if you love cooking, and you make someone else’s food like you are going to eat it, that the end result will be outstanding. I can’t always make it the most healthy when the food prep is out of my hands but I can definitely aim for the most fresh, and clean when I’m the one making the food. Yeah I worked in a Panera in college and we were very clean. Managers were strict about following protocols. All food leftover at the end of the night was thrown out, donated, or taken home by staff. Bakery stuff was donated. Staff usually took home any leftover pre-made sandwiches, soup, and Mac n cheese. Saved me and my roommates a lot of money on groceries. Everything was cleaned thoroughly each night. Never saw a pest anywhere. Not even a roach. Not every restaurant and food service worker is disgusting and careless.

I remember during the Always Be Yourself Unless You Can Be A Swan Flower T-Shirt besides I will buy this beginning of the pandemic, some people were exclaiming that restaurants were okay to be open, because they have some of the strictest food quality and health practices. Daiquiri shop on a very popular tourist street where one might expect to see such things and, maybe, just maybe, boobies. We had a lot of events. One event in particular made a shift supervisor so annoyed that he took a piss in the machines. “But, but, they get cleaned! I’m going there and I’ll be fine!” You say. “if the everclear won’t kill it, it’ll eventually just be cleaned out!” “Cleaning” the daiquiri machines meant pouring the product into buckets, then putting the same slurry back in after a single flushing. No product was EVER disposed of, and some of those drinks sat in broken machines for ages in the summer heat before getting fixed and served. I usually didn’t eat, especially if it was a night shift, and on days I’d usually just bring a bagged salad from the corner grocery and eat it straight out of the bag. That was just me, though, and I have a sensitive system anyway and just won’t risk problems if I can help it. Most people I worked with straight up ate the pizza, fully aware and not caring because it cost us a buck a slice, we were paid garbage with awful tips and just needed to eat. They made the dough there too, in the apartment upstairs that was mostly storage and the rats always are through the bags of flour. The people who went there, like most places frequented by massively drunk tourists, wouldn’t have cared anyway. They all trashed the place, destroyed the bathrooms hourly and were so out of it that on SEVERAL occasions I found a guy using the poker machine booth as a urinal.
