Yummy food but authenticity is the last thing in their minds Birria is very commonly made with beef – and pork or chicken for that matter – and if you think the average birreria is cooking it in a hole in the ground I have a bridge to sell you.

The old-school method for birria would be to seal it in a clay pot with masa and cook it in a pit. You’re right though; barbacoa would also traditionally be cooked in a pit, as would cochinita pibil and pretty much anything else that needed a long cook. It’s not a defining feature of birria at all. Nice info. Maybe next I can do some Mexican in it Hands down the best Mexican in London. The original one is in Canada Water but worth the trek. Talked to the manager last time I was in and they said they were opening another taco joint in Bermondsey then a Mexican/Latin American grill thing in Euston (iirc). Definitely the best I’ve had in London, the burritos are excellent too. I sometime grab one on my way home. One of the best things about living in the area!
