Northern Chinese eat Jian Bing with green onions and soy bean paste. It’s made of corn or millet mixed with wheat flour to give it that yellow color. My mom is from the region and she misses it so much. It’s one of the things you can’t easily make at home, as seen in this video. But TBH I never enjoy the taste. The worst part is when you’re done and you have three extra jars of Nutella, so you make another crepe, but then you have to get more Nutella, but then you have leftover Nutella, and the cycle just continues until you have to go to the hospital. Ham and cheese are always the first thing I think of when someone mentions crepes. When I was in school 40+ years ago, my cooking partner and I made ham and cheese crepes for our Home Ec. final. I was stuck in France in a small beach town in covid. Crepe in English is a general word for thin & light pancakes, which can be made up of any variety/ratio of flour, eggs, seasonings, or other ingredients. It’s more of a form factor than list of ingredients.
