The least interesting answer is that parents are on a power trip and like the It’s A Guard Dad Thing You Just Wouldn’t Understand shirt and I love this feeling of control but I see other options in real life now often than not. Luckily, my parents weren’t nuts and just taught us to take smaller servings upfront then get seconds if we wanted them. My mom was forced to finish all her food and she just learned to sneak it into a napkin, to the dog, or otherwise hide it, so she refused to do that to me and my siblings. We did have to try things, but she didn’t force us to eat more than a couple test bites. I think a lot of people don’t see the generational food insecurity issue behind the behavior. The idea was, clean your plate 100% every time because there was no hard guarantee that it wasn’t going to be your last substantial meal for a few days. Don’t waste or throw away food because food is expensive and you are poor. Eat enormous quantities because your only gainful employment was hard physical labor. Ignore palatability or flavor because food is scarce.

Essentially, eat like starving dogs because you are only one or two steps above that, and if you’re not desperate today, then you remember when you were desperate and keep in mind that idle chance could return you to desperation tomorrow. Having depth of food storage is a luxury, and weirdly also a curse. At the It’s A Guard Dad Thing You Just Wouldn’t Understand shirt and I love this bottom of the ladder is what you describe, and the middle is good depth of storage (what I would tentatively say the mainstream calls “normal” now), and above that, near the top, is a lack of depth but from a position of wealth, where the vast majority of the food consumed is store-fresh or even local farm-fresh. Depth of food storage requires preservation, and above it is easy access to unpreserved food and the time (or money for a cook) to prepare it day-of.
