It makes a huge difference when our kids can articulate why they don’t want to eat something. We’re getting to that point with our daughter. We’ll hand her a plate of food, she’ll burst into tears. We’ll give her a hug for a minute, and then ask her what’s wrong. She’ll tell us she wants her sandwich cut into triangles. We’ll cut the sandwich and then she’s just happy as a clam. Maybe one day we’ll get to the point where she’ll tell us these things without the meltdown, but I have a feeling once that happens she’ll just turn around and become a teenager, and then we’re back to the mystery game of “what’s wrong?” When I was a kid my mom would let me choose a new thing to try, usually a veggie, and then we’d write about it and grade it in a journal. For an autistic kid, it did wonders, and I’m so stoked she managed to figure that one out in what was really a different time for people like me. The vegetables we graded back then are still some of my favorites : )

Just wanted to say you are a good parent. Making kids articulate why they don’t like something is great. I’d get home from school and just nuke a pakage of spinach or steam an artichoke.
