My local grocery store gets these in live, I’ve been wanting to try it but it kinda grosses me out idea of seeing people sucking their heads out. Has more a freshwater taste to it as well, if you know what that’s like. The heads are tasty, but not everyone sucks the heads. Especially because it’s got a lot of seasoning inside so it gets spicy. The real gold is the claw meat. It’s harder work, but worth it. I’m from Louisiana and never been a fan of sucking the heads, it’s mostly just spicy juice. Besides the tails though, i do recommend pulling the claws. It’s got a small bit of meat too. They are better steamed in a butter sauce as well. The absolute best is in a red sauce over rice tho. I’m not sure I’ve had a seafood gumbo with crawfish. The butter sauce you mention is probably a crawfish etouffee which is a golden flour roux with crawfish, and onion etc. If you put crawfish in a smothering red sauce you’re dead to me. – From Breaux Bridge, LA.
