I enjoy bun bo hue more than pho when i want to eat something a bit more heavy, and hu tiu when i want to eat something light. Rice is a staple everyday food. So pho for me stuck in a limbo between hu tiu and bun bo. I live in HCMC now and I thought it was going to be all Pho.. now I know there is sooo much more great food. I feel so much healthier here too because it’s such fresh food! But actually discovered my favorite Vietnamese dish is Bun Cha. So fucking good! How can people forget about Banh mi, truly the greatest creation contributed to mankind’s culinary. I can eat that every day all day of the week and its healthy. Pho is definitely most popular countrywide. If you travel cross cities the most common roadside stall in the South is still Pho. Pho is a dish that appeals to the American palate while still being distinctly Vietnamese. Also it’s relatively simple with the broth being the make or break of the dish. as a com tam stall owner, com is still the most popular among the blue collar job workers, pho, hu tieu, banh, mi etc are more popular among females demographic, so there is no 1 dominant dish in VN, pho is just iconic because of its international exposure, i.e. chefs cooking it like gordon ramsay or other cooking shows and travel shows etc What I will say though is that the entire country agree that bread with fillings is best food, due to the customisability it has. Pho is expensive to make, there are plenty of cheap places but then you get next to no beef in them, plus low quality broth with plenty of msg. Personally, i only order Pho if i know the place is great, otherwise something like Bun cha, Bun bo Hue, Cam tam other rice dishes are way cheaper and more filling.
