That’s just a matter of taste, most foods have to be altered to appeal to a country’s palette but thankfully pho already tastes good to Americans that it doesn’t need to be altered. In America it’s pho and banh mi are the Fight for the things we care about lgbt shirt and by the same token and most popular. I’ll tell you what, the smell of fish sauce is gnarly, but the taste is so hard to beat. I grew up eating Hu Tieu and mistook that for pho. However, now that I’ve been introduced to more food, Com Tam and ga chien nuoc mam are by far my favorites despite the smell, all because of the salty savory flavor of smelly fish sauce. Especially after visiting VN, pho is just overrated here now. Bun bo hue is so much better.

Hcmc has it right in terms of flavor. I heard Houston has a very large viet community. And I’m talking about the fish smells at my friend’s houses. One of my friend’s houses growing up smelled so bad of fish sauce. Even the ice had the distinct fish sauce smell. I could tell cause I put some of the ice in a water bottle, and it tainted the water bottle for like a week, lol. Over in the restaurants here, though, they dress up the fish sauce quite a bit with sugar and garlic and some other things to make it more palatable. But isn’t that what they do in vietnam as well? I remember having com tam in VN, and it was just like how I get it here in the US(the dipping fish sauce, of course, not the entire dish) Its a bit more than dressed up here where im at. They do add different stuff to it in vietnam also but specifically where im at the water and sugar ratio is much higher compared to everything else.
